Now, we’re looking for you: our new Sous Chef.


 


Sous Chef:


 


As our new Sous Chef, you will work closely with our Executive Chef to lead the daily operations of our kitchen for brunch, lunch, dinner, and banquet service.


 


Our culinary operations include a 45-seat full service restaurant, a 70-seat Melody Bar saloon, and events catering for a range of formal to informal on-site events like weddings, fun pop-ups, private and corporate functions, and meetings and cultural events.


 


Our culinary team makes the magic happen. You’ll oversee the small team, and your main goal will be to guide and motivate your teammates to be the best they can be. 


 


You’ll lead by example, imparting your knowledge and skill through coaching and mentorship. Under your leadership, we’ll be confident that our culinary operations will be executed flawlessly, and that our guests will continue to enjoy the high standard of service and food that we’re known for.

Practically speaking, you will:


 



  • Oversee day-to-day kitchen operations for brunch, lunch, and dinner service as well as banquet events

  • Handle the requisition and purchase of ingredients

  • Oversee daily production and quality control

  • Ensure proper equipment operation/maintenance

  • Ensure proper safety and sanitation in kitchen

  • Expedite service and support the line as necessary

  • Develop the kitchen team through training, coaching, and mentorship


 


The Details


 


This is a full-time, permanent position, working in our beautiful, landmark hotel in a vibrant neighbourhood right at the intersection of Queen Street West and Dufferin Street.


 


You’ll work between 40-50 hours per week, with a varied schedule (including day, evening, weekend and holiday shifts). You’ll need to have flexibility adjust your schedule to support our hotel kitchen which operates between 6 am and 1 am 24/7.

Qualifications


 



  • Experience as a chef in a high-volume operation (standalone restaurants as well as hotel or catering experience)

  • Ability to seriously cook: a solid understanding of contemporary and classic technique and familiarity with current food trends

  • Familiarity with and commitment to seasonal, locally produced foods and products and local vendors

  • Experience leading and developing a culinary team (training, mentoring and motivating)

  • Food handler certification

  • Red seal certification is an asset
